Keto Chocolate Flaxseed Waffles

Since for the forseeable future I am off dairy while following keto and under orders to include more fiber like flaxseed into my diet I have been playing around with some recipes in an attempt to get more flax in.

I tweaked a protein waffle recipe I had and here is the result.

Ingredients:

• 1 cup – Almond Flour
• 1/4 cup to 1/2 cup – Almond Milk, Unsweetened
• 2 Tbsp. – Cacao Powder
• 4 – Large Eggs
• 1 Tbsp. – Vanilla Extract
• 1 Tbsp. – Cinnamon
• 2 Scoops – Collagen Peptides
• 2 Tbsp. – Coconut Oil
• 2 tsp. –Baking Powder
• 1/4 cup – Ground Flaxseed
• 2 Tbsp. – PB2 Powdered Peanut Butter Chocolate

Directions:

1. In a large Mixing Bowl combine all dry ingredients, until well combined.
2. Add vanilla, and eggs and stir until combined. Slowly add almond milk until desired thickness is achieved. The batter should not be runny but not thick either. The amount of milk you will need depends on your almond flour. I found the more finely milled flour needs less milk, the thicker grain needs more.
3. Heat Waffle Maker.
4. When fully heated add batter. Do not over fill, use spoon to spread batter evenly over waffle maker surface.
5. Remove from waffle maker and allow to cool.
